My Filipino Lumpia Ninja Air Fryer Recipe!
I hate the greasy mess of frying Filipino Lumpia, so I used my Ninja Air Fryer this time and honestly, I will never go back to cooking it old school ever again. Cooking in the air fryer means less grease flying everywhere (since it's contained) and it cooks much faster with concentrated hot air rather than submerging the lumpia in a vat of oil.
First you need to chop up the veggies - garlic, onions, carrots and celery in a food processor. Next you mix it with one pound of grass fed ground beef and season it with garlic powder, paprika, salt and soy sauce. Crack one egg into the mixture to bind everything together. Mix it up all up thoroughly so everything combines evenly. I like to hit it with more soy sauce once its all mixed.
You can use regular spring roll rice wrappers since lumpia wrappers are pretty rare in most places. Wet the wrappers with some water and drop a tablespoon of the meat into the middle. Roll it up and add a dab of egg to the end of the wrapper to seal it all up. And finally repeat until you've used up all your meat and wrappers.
Once you have all the lumpia set aside, brush it lightly with some olive oil and place as many as you can into the air fryer. Heat it at 390 degrees for 5 minutes. Remove, flip all the lumpia over and heat again for 5 minutes at 390 degrees. And that's it, traditional lumpia cooked in the air fryer. Lola will never know the difference, I guarantee!
