Instead of starting with something complicated, I went straight to my favorite thing to make so far: gluten-free chicken nuggets that taste fresh, stay juicy, and scratch that takeout itch without actually ordering takeout.
Why I’m into air frying lately
I like anything that makes it easier to cook at home without feeling like I’m giving something up.
With an air fryer, I can keep the process simple, control portions, and avoid the heavy, greasy aftermath that comes with traditional frying. It also makes it easier to throw together a quick protein-based meal when I’m busy.
The recipe: gluten-free chicken nuggets
This is my current go-to because it’s fast, customizable, and the texture comes out way more satisfying than I expected.
What I used
Boneless chicken fillets, cut into small chunks (think popcorn chicken / nugget size)
Almond flour (grain-free / gluten-free)
Gluten-free panko flakes
1 egg
Cooking spray (for the crisper/basket)

How I prepped the chicken
I pre-seasoned the chicken before breading. My simple mix was garlic powder, smoked paprika, and regular salt. Nothing fancy—just enough to make every bite taste like it was meant to be eaten on its own, not just dipped in sauce.

Your exact timing may vary depending on how big you cut your pieces, but this approach gave me a solid crust without drying the chicken out.
How they tasted (the part that matters)
The texture was the win here.
The outside got nicely crisp, but the inside stayed juicy—like the chicken held onto its natural moisture instead of turning into that dry “frozen tender” vibe. It tasted fresh, and the seasoning came through without needing a ton of sauce.
If you want even more flavor, I’d go two directions:
Marinate the chicken overnight
Or add more seasoning directly into the breadcrumb mix
But even with my straightforward seasoning, the end result was good enough that I’d rather make this than buy frozen tenders or grab takeout.
